petit-déjeuner suprême (i.e. super yummy breakfast)


I had to get some bloodwork done this morning, and it required that I not eat or drink anything for at least 12 hours. By the time I got home it was after 10am and I was famished. My usual smoothie wasn’t going to cut it, so I looked in the fridge to see what there was, and voila! Sometimes the best recipes are made from what you have on hand. Also, we eat with our eyes, so this really does it for me visually, so mouth-wateringly appetizing…

Super Yummy Breakfast

2 eggs, slightly beaten

tomato, chopped

handful baby spinach

two forkfuls feta cheese

knob of butter

ripe avocado

salt and pepper

toast

Melt butter in pan on medium low until just foamy. Pour in beaten eggs and let them sit there for a minute, don’t stir. Add spinach and tomato and season with salt and pepper. With a rubber spatula, gently move ingredients around pan, folding more than stirring, until eggs become opaque but are still creamy. Crumble feta cheese into pan and continue to gently fold all ingredients until spinach and tomato are warmed through, but not wilted or cooked down. Remove avocado from skin and smash with fork onto plate. Sprinkle with a little salt and pepper to taste. Ladle warm egg mixture over cold avocado and serve immediately with toast on the side.
